Recipe: Easy skillet lasagna

This comfort dish has been converted to a fast and easy meal making skillet lasagna for your family in no time flat. You get all the flavor and no mess with this one pot recipe.

Do you have a hankering for comforting classic lasagna but don’t want all the fuss? Then this Easy Skillet Lasagna recipe is for you. In a mere 30 minutes, you can have comforting cheese lasagna for you and your family. A great weeknight meal!

Ingredients

  • 2 Tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 tsp garlic, minced
  • 1 lb lean or extra ground beef
  • 1 tsp oregano
  • ½ lb lasagna noodles (about 7-8 noodles), broken in to 2 inch pieces
  • 1 – 22 ounce jar of pasta sauce
  • 1 cup water
  • Kosher salt and fresh ground pepper to taste
  • ½ cup ricotta cheese
  • 8 ounces shredded mozzarella cheese
  • 1/3 cup grated parmesan cheese
  • Garnish with fresh basil leaves

Instructions

In a large skillet with a lid heat the olive oil over medium heat add the onions and garlic and sauté for 3 minutes, stirring so they do not burn.

Add the ground beef and cook until browned, breaking it up with a wooden spoon.

Next, add the oregano, salt and pepper.

Add the lasagna noodles, the jarred sauce and the water and stir to combine.

Cover, bring to a boil and allow to simmer over low heat for 15-18 minutes or until the noodles are cooked. Stir occasionally so the noodles won’t stick together.

Then add the ricotta cheese in dollops around the pan and sprinkle the mozzarella and parmesan over the top.

Cover and allow the cheese to melt.

Garnish with fresh basil leaves. Serve immediately.
