Chef Johnny Bridge of the University of British Columbia marries top Canadian beef with a fresh root vegetable to create a flavourful visual treat.

With his beet and beef mashup, Johnny Bridge, residence chef at the University of British Columbia, may have created the burger world’s answer to the Kinder Surprise.
Bridge, a B.C. native, wanted to combine tasty Canadian beef with a root vegetable from the UBC Farm, a bustling 24-hectare on-campus farm and forest system.
“Canadian beef is among the world’s best,” he says. “Mix that with the UBC farm, and it’s a chef’s dream. I wanted to highlight them both and create a flavour and visual treat.”
